Danie Malan is now in the fifth generation of winemakers on Allesverloren and loves working out the typical aromas of the grape varieties. His passion here is particularly for red wines. The family winery Allesverloren is located approximately 100 km northeast of Cape Town on the southeastern foothills of the Great Kasteelberg in the beautiful Riebeek Valley. The grapes for this Cabernet grow in the Riebeekberg area on Malmesbury slate. In this warm region, with low rainfall, the refreshing westerly winds are an important aspect of high-quality wine production. A small part of the vineyards (20%) are protected from excessive stress by drip irrigation. In addition, there is, of course, professional vineyard management and low yields due to green waste from the grapes in early summer. It is harvested by hand at the end of February, when the complexity of the aromas in the grapes is highest, the tannins are ripe but the individual grapes are still firm. Each vineyard is vinified separately. In the cellar, the skins are fermented in a temperature-controlled manner for 7 days. Cabernet is later aged in wooden barrels for 18 months, 30% of which is first occupancy and 70% second use. Year after year, Danie Malan works out an authentic Cabernet Sauvignon, which is characterized by his unmistakable grape variety character, the origin of Swartland in South Africa and, of course, by his own signature.
