About the wine

If we can offer something special for Christmas 2018, it is this dominant Chenin Blanc 2017 Cartology. The winemaker from the South African winery Alheit greets us with this wine, which he grows in the countryside. Flaschenpöstler culinary tip: This Chenin Blanc is ideal to serve with pretzel sticks or meatballs with tomato sauce.

Tasting note
Citrus oil and pear on the nose, with light floral and honey-like notes. The palate is very well proportioned, with a firm structure on the middle palate, with a rich mouthfeel. The taste is persistent and even intensifies over the course. In the finale, the wine is dry and salty and refreshes the palate. This vintage has a juicy, thirst-quenching quality.
Culinary recommendation
An ultimate wine that is one of the best white wines in the world. Accordingly, combinations with equally high-quality dishes are obvious. Mundet also “solo”, of course.
Vinification
Cartology parcels are usually dry-managed plots of bush vines. The minimum age is 35 years, although most are between 40 and 50 years old. The average yields for these plots are around 3 tonnes/ha or around 20 hl/ha. Cartology 2022 consists of 92% Chenin Blanc and 7% Sémillon. Chenin comes from our plots in Skurfberg, Perdeberg, Bottelary, Upper Blaauwklippen, False Bay and Tygerberg. The Sémillon comes from the old La Colline block in Franschhoek. The grapes are sorted by hand and pressed as a whole bundle. The juice settles very easily (we like very cloudy raw juice), without adding additives to the raw juice, spontaneous fermentation either in cement eggs, clay amphoras, foudres or old barrels (various sizes). Fermentation can take between 3 weeks and 11 months. The wine is stored on lees for about 12 months and then stored in tanks on fine yeast without fining for a further six months before bottling.
