The grapes for Marsala Vergine Riserva 1998 are carefully harvested by hand to ensure optimal physiological ripeness and a rich aromatic and polyphenolic profile. After the traditional pressing with a high sugar content, in which the most valuable components of the skins are converted into the must, controlled fermentation takes place. Mistella is then added, i.e. grape must whose fermentation was stopped by the addition of wine alcohol, supplemented by a small addition of pure wine alcohol to create the classic basis of Marsala. The actual character of this wine is created by its extraordinary aging process. From September 18, 1998, Marsala matured for over 23 years in selected wooden barrels in the historic Cantina Garibaldi, around 134 meters from the sea. Under the influence of maritime air, natural air circulation and the special microclimates of the Baglio vaults, he developed depth, tension and balance over decades. During this long barrel aging, the so-called Angel's Share played a central role. 41 percent of the original volume evaporated over the years. This extreme natural concentration process gave the wine exceptional structure, aromatic density and complexity. At the end of this aging process, only a few bottles could be filled from a single cask — an extremely limited, almost iconic edition that impressively underlines the uniqueness of this Marsala Vergine.
