Tasting note
Sophie is fine, elegant and aromatic: On the nose, fragrant notes of white flowers, peach, apricot and a hint of citrus zest. Fresh and clear on the palate with delicate creaminess, harmonious acidity and a nice balance between juicy fruit and fine minerality. A stylish, complex white wine with finesse and a precise, long finish.
Culinary recommendation
Perfect with grilled or steamed fish, seafood, light meat dishes, Asian flavored cuisine, vegetable terrines, risotto or goat cheese. A versatile companion for light and elegant dishes.
Vinification
The destemmed grape berries macerated in the press for four hours to remove aromas and structure from the to extract berry skins. The pressing process was slow and gentle. Fermentation continued spontaneously with grapes' own yeasts in wooden barrels one of different sizes. The then matured Wine on fine yeast for a whole year, resulting in Refined aroma and taste.
